al jazaratu = the carrot
jazaratun = carrot you can't have "al" in the begining and "un" (tanween) in the end of a word at the same time. I don't know what you mean by "ghalaat".

The long "aa" of ghalaa becomes short "a": [hia] ghalat [a]ljazarata.
