I think there is no "correct" or "wrong" way to write this word.
I think that it is transilatared more often as "maktoob" (1 550 000 hits by google) whereas "maktub" has 73 100 hits.
However, Paulo Coelho named his book "maktub".
Thus, you write is as you wish, since both are read the same way.
