Your first 1979 is mathematically correct, but when we remember the YEAR, we usually just speak literally each and every numbers singly, like一九七九, anyway your counting is accurate! Great!
I Will Try out Your Way:
我(出)生于一九七九年,今年二十六岁。Ex1
or我一九七九年生,今年二十六岁。Ex2
Meaning "I was born in (the year of ) 1979, and now I'm 26 (years old)".
EX1 literally reads word by word in English as: I Birth(Born) In 1979 Year, Now 26 Years.
EX2: I 1979 Born, Now 26 Years.

我I, me
出生birth, born
于 in, of
一九七九年year of 1979
今年this year, current year while 今is today literally, and 年is year.
二十六岁age of 26, aged 26 while 岁equals to year, which is often used to one's age.

Nowadays, modern Chinese like to write that way, but in ancient literature, you can also find the Year was written classically, as Salim did.

Like The 9-11Terrorist Attack
We speak like this, 九-一一恐怖(主义)袭击
sounds like: Jiu3 yao1 yao1 kong3 bu4 (zhu3 yi4) Xi1 Ji1
here the 一(1)is not pronounced yi1 but yao1, because it is oral Chinese.

Although there are numbers like千(1,000)、万(10,000)、亿(100,000,000)、兆(1,000,000, 000), we usually count just to thousands, that's enough.

In More's E-code transmission, 0 and 1 pronounce Dong4 and Yao1, because the 0 is like a hole(洞), which pronounces Dong4.

Actually I think it's easier that way, nymber by number... way easier
so this 出生 can be a noun (birth) and a past participle (born)?
