Default Maghrebi Cuisine

I've been thinking about this alot these days. Some background information about me. I'm a chef instructor at The California School of Culinary Arts, Le Cordon Bleu Program. I was born in France to Algerian parents and I have been back to Algeria. I attended culinary school in Paris. I'm writing a cookbook on Algerian cuisine. But the more I think about it it's really not possible to look at Algeria without looking at Tunisia and Morocco. We share common histories.

I've discussed this with my Moroccan and Tunisian friends and it doesn't make sense to us to create artificial culinary markers based on national boundaries. I think it's better to look at regions and different historical threads.

There is very little information about Magrhebi cuisine in English.

What do the other Maghrebis here thing about this? Also I'm interested in discussing our cuisine. We are planning a trip to North Africa next year hopefully. I cry thinking about going back like a melodramatic Maghrebi!

Salam Fouad,
I'd really like to help, but I am not a good cook! I don't know what can I do for you!
Have you heard about choumicha? She is one of the most popular persons in Morocco. Many Moroccan women follow her programms about cooking (I don't).

As you said, we can't talk about a cuisine as a whole, it depends on regions! That's why Choumicha has another programm, where she travels all over Morocco, talks about regions and their cuisines particularities.

If you plan to come to North Africa soon, then you can easily find her book if you pass by Morocco. It'll give you some inspiration, but you'll need to translate it.

I guess that her book was in Arabic, so that a larger part of Moroccan housewives could get it and make use of it.

Of course she does speak French, like almost all Moroccan people.

I think I'll do a series. Finish up my Algerian cookbook first, then Morocco, then Tunisia.

I'm making a list of collaborators. We really need to write our own books in Englsh.

Did you know that there are more cookbooks on Middle Eastern and North African cooking then all other cuisines COMBINED? We have a wealth of cuisines that hasn't been shared that much with the outside world.

It's good idea to start by countries then.

And no, I didn't know that our cuisines are that rich!! Let us know when your first book is finished :-)
