I know it's late for translation, but I think it can be useful for someone:

I want to do something in medicine, like a pharmacist for example, so i dont think i would have the time to do Art but i might do it outside school.

Quiero hacer(estudiar) algo en(relacionado con) medicina, por ejemplo farmacia, por tanto no creo que tenga tiempo de hacer(estudiar) arte, pero puedo hacerlo fuera del colegio.

I have wanted to do medicine since i was little. I want to work with people and try to help them what ever way i can. It is tough but worthwhile.

He querido estudiar medicina desde que era niño/a. Quiero(me gustaría) trabajar con gente e intentar ayudarles de en cuanto me sea posible. Es duro, pero merece la pena.
Art and I love Hockey. I like Rugby too. That is something my dad and i share together. I have always liked dance as well. I went to dance school when i was younger. I watch rugby with my dad. My family is a big rugby family!

I plan to work in a spanish restaurant. The staff all speak spanish to each other. Its much cheaper then an exchange and quite profitable too!

Planeo trabajar en un restaurante español. Todo el personal habla español. Es más barato entonces un intercambio y bastante provechoso(lugrativo? útil?) también.

I like our school. Spirit week was a very good idea. It was really unusual and very fun. The school council was an excellent idea, as it gave the students more opinion.

Yes, very much. I enjoyed it a lot. I was able to put more effort into projects because i had much more time, so that was good! However, i did have a lot of projects from different subjects all at the same time.

Sí, demasiado. Disfrute mucho(lo pasé muy bien). Pude esforzarme más en los proyectos porque tenía mucho más tiempo, eso estuvo bien. Sin embargo, no tuve muchos proyectos de distintas asignaturas al mismo tiempo.

I loved Budapest. It was great because I was with all my friends. I got to see a new country and a new culture. It was very beautiful.

Me encantó(me gustó mucho) Budapest. Fue genial, porque estaba con todos mis amigos. Pude conocer un nuevo país y una nueva cultura. Era muy bonita(la ciudad--> Era una ciudad muy bonita).

I loved the Ballet. It was spectacular!

It was fun. I had never experienced anything like it, so it was good. I was with my friends also.

I went to a hospital. I loved it because i was working with the patients. It was very different!

I really enjoyed skiing! But i cant really continue it! My family dont like it.

Im trying to learn how to play the guitar, but ill see how it goes.

I alway wished i had learned an instrument when i was younger.

I had all project subjects in the first term and i had nothing in the second. That meant in the first term i couldnt participate in certain activities. I didnt have the time.

Tengo todas las asignaturas del proyecto en primer término y nada en segundo termino(do you mean priority?).Eso significa que en el primer "término" no puedo participar en ciertas actividades. No tengo tiempo.

I have learned to say no and not to be such a pushover. Now i dont do all the work in group projects. That can be annoying.

He aprendido a decir "no" y a no ser tan pusilánime. Ahora no hago todo el trabajo en los proyectos de grupo. Puede ser molesto(un fastidio).

I got to be part of the newsletter. I was part editor, and i really enjoyed it. I like journalism! It was very good!

Conseguí formar parte del periódico. Era redactor de parte(articulista?), y lo pasé muy bien(me gustó mucho). ¡Me encanta el periodismo! fue estupendo.

Not really but im getting in to it!

En realidad no(tanto) pero estoy consiguiendo entrar en ello(that sounds forced too).

I want to work in the restaurant hopefully , but i plan to relax also.

Quiero trabajar en el restaurante a ser posible, pero también pretendo descansar.

I cant remember, i think i did very little. I did go away to New York though. I love that city.

No puedo recordar, creo que he hecho muy poco. También fui a Nueva York. Adoro(me encanta) esa ciudad.
