With this sentence you almost reach the bottom line... that is how do each of us feel the world, what medium is there between the reality ("the truth") and what we can know of it... there are of course several intermediate levels and tools such as our eyes, hears, skin sensitivity... and the signification we give to our eyes, hears (...) perception. Of course each of these are different between two given people which means two people do not feel the same fact the same way both because of the interpretation they give to it and because their "captors" don't tell them the same thing.

You also have to take into account that the same given fact may not mean the same thing (ie does not represent the same reality) following the context (note that maths use to completely ignore this way to approach sciences). And let me take a scientific argument as you did for maths. The science I use to know the best is not as strict as maths though, it is Biology/Physiology.
So I use to record blood "PO2" (which actually is oxygen pressure in people blood) of several people under several conditions and compare everything. A standard PO2 is around 85-90 mmHg. In case it would fall around 30 mmHg I would be in a panic and send the guy directly to vital emergency departement in the nearest hospital. Though this is a common recording in my everyday experimentations at the laboratory... and that does not worry me much since people with those values are well trained athletes in severe hypoxic conditions (ie up to 4500m of altitude).

All that was to say that in case you deeply want to determine a truth... the only one you can is your one and no other one.

Hope I remain understandable to most people around here else I'll be glad to give some more explanations
