Maghrebi Cuisine
I've been thinking about this alot these days. Some background information about me. I'm a chef instructor at The California School of Culinary Arts, Le Cordon Bleu Program. I was born in France to Algerian parents and I have been back to Algeria. I attended culinary school in Paris. I'm writing a cookbook on Algerian cuisine. But the more I think about it it's really not possible to look at Algeria without looking at Tunisia and Morocco. We share common histories.
I've discussed this with my Moroccan and Tunisian friends and it doesn't make sense to us to create artificial culinary markers based on national boundaries. I think it's better to look at regions and different historical threads.
There is very little information about Magrhebi cuisine in English.
What do the other Maghrebis here thing about this? Also I'm interested in discussing our cuisine. We are planning a trip to North Africa next year hopefully. I cry thinking about going back like a melodramatic Maghrebi!
